Ingredients

  • 1/4 cup onions, chopped fine
  • 1/4 cup green peppers, chopped fine
  • 3/8 cup Milk
  • 3/8 cup eggs
  • 1/4 cup ketchup
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2 1/2 lbs black pepper
  • 3/4 cup breadcrumbs

Topping Ingredients

  • 3/4 cup ketchup
  • 1/4 cup brown sugar
  • 1/2 tsp fresh parsley

Instructions

  1. In a mixing bowl, mix together the onions, green peppers, milk, eggs, ketchup, salt and pepper.
  2. Add ground beef to bowl and mix until combined with gloved hands.
  3. Add breadcrumbs to ground beef mixture. Mix with gloved hands until ingredients are combined.
  4. Place ground beef mixture into a baking pan. Use dough spatulas to form into a loaf.
  5. Sprinkle warm water on top and smooth out any cracks. Air holes will cause separation in the cooked meatloaf.
  6. Cover with plastic and foil. Bake at 350 for about 1 hour.
  7. Remove plastic and foil. Cook for about 10 more minutes or until the top is browned and meatloaf reaches 165-degree internal temperature.
  8. Allow meatloaf to cool for 5 minutes.
  9. Combine ketchup and brown sugar with a wire whip.
  10. Cut meatloaf in half widthwise, and then into 16 equal pieces. Slightly separate the two rows down the middle of the loaf to allow sauce to fall in-between.
  11. Ladle 4 oz of ketchup mixture over each separated half (8 oz total for the loaf).
  12. Place topped meatloaf back in the 350-degree oven for 5 minutes to glaze the sauce.
  13. Garnish with fresh parsley and serve.
