Ingredients

  • 1 large (or 2 medium) Fresh Onions, ¼” diced
  • 8 jalapenos Fresh Jalapenos, ¼” diced
  • 1 pound Ground Beef
  • 1 pound Ground Pork Sausage (“Hot” or “Spicy” preferred)
  • 1 pound Chuck Roast
  • 1 - 8oz can Tomato Sauce
  • 1 - 14.5 oz can Crushed Tomatoes
  • 3 - 14.5 oz can Petite Diced Tomatoes
  • 1 - 14.5 oz can Whole Peeled Tomatoes
  • 1 - 7 oz can Diced Green Chiles
  • 1 - 15 oz can Black Beans
  • 1 - 15 oz can Red Beans
  • 1 - 15 oz can Kidney Beans
  • 1 - 15 oz can Pinto Beans
  • 5 tbsp Chili Powder
  • 3 tbsp Garlic Powder
  • 3 tbsp Onion Powder
  • 1 tbsp Cumin
  • 1 tbsp Smoked Paprika
  • ¾ tsp Cayenne Pepper
  • 3 tsp Salt
  • 2 tsp Black Pepper

Instructions

  1. Sauté onion and jalapeno in a skillet with a little cooking oil until they begin to soften and turn brown. Then, transfer them to a crock pot.
  2. Next, add the ground beef to the skillet and season with salt and pepper. Cook the ground beef over medium-high heat. As the meat cooks, it will render quite a bit of fat. Do not drain it, continue cooking until all the fat reduces and is reabsorbed into the meat. When no more liquid fat remains and the ground beef is well browned, add it to the crock pot.
  3. Place pork sausage into the skillet and cook until well caramelized (beware of grease popping), and then add the pork sausage to the crock pot.
  4. Dice smoked chuck roast into bite-sized pieces and add to the crock pot.
  5. Add tomato sauce, crushed tomatoes, and petite diced tomatoes to the crock pot. Do not drain any of the liquid from the tomato products.
  6. From the can of whole peeled tomatoes, gently squeeze each tomato to release its juices. Add the tomatoes, the juice from the tomatoes and juice from the can to the crock pot.
  7. Using a colander or strainer, drain and rinse beans thoroughly and add to crock pot.
  8. Add the seasonings to the crock pot
  9. Stir everything together and simmer for at least a couple hours.

Notes

  • All canned tomatoes are added with the juice.
  • All beans are drained and rinsed.
  • Jalapenos are added with all ribs and seeds.
